Introduction
My wonderful goddess syster, Kristi, provided me with this incredibly delicious taco soup a few years ago at a Goddess Retreat. I was immediately in love with it. It's nutrious and incredibly yummy! Ingredients

2 cans Pinto Beans
2 cans Stewed Tomatoes
1 can creamed corn
1 can Sweet Corn
1 can Rotel Tomatoes
1 pkg. of Hidden Valley Ranch Buttermilk Dressing
1 pkg. Ortega Taco Seasoning
1 medium onion
1 jalapeno (optional)
Directions
Chop and saute chopped onion, and jalapeno until desired consistancy.
Add the rest of the other ingrediants into the pot.
Cook on med-high heat 30-45 minutes.
This is vegetarian. However, you can add crumbles if you want to keep it vegetarian but want the meat texture. You can also make it completely non-vegetarian by adding low-fat ground beef - but don't forget to account for it in your intake.
Alternate #2: You can also choose low-sodium vegetables to lower the sodium intake.
Serving Size: Makes about 10 servings
