Ingredients

    1-1/2 cups Self rising white corn meal mix
    1 cup low fat buttermilk
    1 large egg
    1/2 cup yellow sweet corn kernels

Directions

Preheat oven to 450 degrees F. Mix all ingredients thoroughly and place in a cast iron skillet coated with oil or butter spray. Bake 20 minutes until brown.
