Introduction

Ingredients

    2 Chicken breasts, no skin, deboned, cut into bite-size pieces
    2 T Sesame Oil, or olive oil
    4 Carrots, shredded
    8 Green onions, diced
    1 C Mushrooms, cooked or fresh, sliced
    1/4 C Low sodium soy sauce
    1 can Water chestnuts
    3 1/2 C Cooked brown rice
    5 large eggs
    Garlic powder to taste

Directions

Scramble eggs. Set aside. Add 1 T. oil to wok or large skillet, warm up; add raw vegetables, cook until crisp-tender, add cooked vegetables & spices. Cook until soft, set aside. Cook chicken in 1T of oil. When warmed through, add, vegetables, and soy sauce. Stir to prevent sticking. Add rice and cook through. Season to taste.
