Introduction

Number of Servings: 4

Ingredients

    2 small shallots, minced
    1 fresh jalepeno, de-seeded and minced
    2 T agave nectar (can sub honey)
    1/4 cup rice wine vinegar
    Juice of 1 lime (2 T)
    3 T fish sauce (Can use all soy if desired but will change flavor slightly)
    3 T soy sauce

    6oz Chicken Breast, grilled or poached, shredded

    1/4 large cabbage - about 4 cups shredded
    3/4 cup bell pepper, julienned
    1/2 cup carrot, grated
    3/4 cup cucumber, de-seeded and julienned

    2 T chopped Mint
    2 T chopped cilantro


Directions

Whisk together shallots, jalapeņo, agave, vinegar, fish sauce, soy sauce & lime juice. Set aside

Cook chicken - either grill or poach, set aside to cool and shred or slice thinly

Combine vegetables, dressing and chicken and toss together. Add cilantro & mint. Chill before serving.
