Introduction

Ingredients

    * Beans, red kidney, 1 cup
    * Beans, white, 1 cup
    * Yellow Sweet Corn, Canned, 1 cup
    * Tomatoes, red, ripe, canned, with green chilies, 2 cup
    * Green Chili Peppers, canned, .25 cup
    * La Victoria Thick'n Chunky Salsa Verde Medium, 30 tbsp (1 jar)
    * Potato, raw, 6 medium (2-1/4" to 3-1/4" dia.)
    * Chicken Breast, no skin, 3 unit (yield from 1 lb ready-to-cook

Directions

Wash potatoes; cut into aprox 1" chunks; place pieces in microwave safe bowl & cover with plastic cling film - lightly. Place in microwave and give it a go for about 3 1/2 minutes, remove carefully with pot holders and shake about to mix up the potatoes, rearranging them within the bowl, replace and go another 3 1/2 minutes.

Bake the chicken pieces at 390 degrees on a sheet for about 40 - 45 minutes. After chicken cools, cut into aprox. 1" chunks.

In a large pan on med heat, add all of your ingredients (the beans being rinsed and drained prior to entry into the mix) and simmer until potatoes are at the fork tender consistency your desire. Stir semi-frequently to keep from having anything stick or burn. Burning is not recommended.

Serve up in bowls. You could add lettuce, cheese &/or a dollop of sour cream if desired, though these ingredients are not factored into the nutritional information.
