Ingredients

    1/3 cup regular oats (not instant)
    2 egg whites, large
    1 tbsp nonfat cottage cheese
    2 tbsp cooked pumpkin
    1 tsp pumpkin pie spice
    2 packets Splenda (optional)

Directions

Mix ingredients together & cook on a teflon pan to eliminate the need for any butter or oil. Otherwise, use a spray oil for the pan.

Topping ideas: chopped nuts, banana slices, sugar free syrup, pumpkin butter, strawberry slices, applesauce, peanut butter... try my "Heavenly Fruit Dip" recipe!

Makes 1 large pancake or 2-3 small pancakes - depends on how you pour the batter!

    Wasn't impressed with this recipe. Should have indicated this needs to be run through a Blender or food processor. I didn't use those and what a mess I had. It stuck in my pan, even though I melted a teaspoon of butter before dropping the batter in and whole thing stuck. Not sure I'll make again - 1/31/15

    You HAVE TO blend the ingredients with a blender/food processor. I mixed and plopped the oatmeal balls in the pan with pam and what a mess! The batter was more like grainy stuffing! And even with pam... they stuck to the pan! I highly suggest the splenda also! - 11/1/11

    These were just ok. I was really excited about them. I mixed everything up in the blender first so the texture was okay but the flavor was bland. I don't like spicy pumpkin bread but this needed a little something extra. - 8/19/11

    Incredible!
    Used a food processor to mix all the ingredients smooth and added 1/2 a small banana to the mixture! VERY GOOD! :) - 10/23/10

    Haven't tried it, but it has me thinking about maybe making a protein oatmeal with pumpkin in it. Sounds like a good idea. Thanks! - 3/3/10
