Introduction

Ingredients

1 lb. Beef
1 Onion, diced
3 cloves Garlic, minced
4 Tbsp Old El Paso Medium Taco Sauce
6 (2 oz each) Flour Tortillas
2 c. Cheddar Cheese, shredded
2 cans Old El Paso Mild Enchilada Sauce
2 tsp. Salt - or to taste.
Sour Cream
Sliced Black Olives
Directions
Preheat oven to 375-degrees and grease a baking pan.
Cook Beef, draining grease. Add onion, garlic, and salt. Cook until onion is transparent. Add 1/2 can or more of enchilada sauce and the taco sauce. Add 1 cup of cheese. Heat until cheese is melted and mixed in well.
Lay out the tortillas and dish equal amounts of the filling into each. Then roll them and place them in the greased baking dish with the seam side down. Pour the rest of the enchilada sauce over top. Sprinkle the rest of the cheese on top. Cook for 15 - 20 minutes.
Garnish with sliced black olives and sour cream just before serving.
Makes 6 servings of 1 enchilada each.
(A good side dish is Zatarain's Spanish Rice.)
