Ingredients

    8 oz red bell peppers, seeded & sliced
    1 sm vidalia onion, sliced / 2 garlic cloves, minced
    1 jalapeno, seeded & minced
    1 1/2c strained canned tomatoes
    1/2 c veg broth
    1 T chopped basil
    1 T chopped rosemary or oregano

Directions

mix all ingredients together in saucepan & bring to boil over med heat. When veg are tender, puree the mixture in a blender little at a time. Cool the soup & serve hot or cold.
Time savers::
I do not puree my soup. Also italian seasoning instead of individual seasonings ; used chopped garlic ; probably would have used mixture of frozen chopped onions & peppers if i had thought of it in time.
