Introduction
A family favorite, this is a fast and easy meal, heart and filling. It's amazing with corn bread (for those who can "afford" it with their meal). It is FULL of potassium and protein, and about 1/4 to 1/3 of the sodium in lots of white chile recipes. Yummy! A family favorite, this is a fast and easy meal, heart and filling. Ingredients

1 TBL Olive Oil
1 Small onion, chopped
3 Medium garlic cloves, peeled and chopped
Small Red Bell Pepper, chopped fine
30 Oz. can of white beans, undrained (2-3 cups)
4 Oz. can chopped or diced green chiles
1/2 tsp ground cumin
1 tsp Chile Powder
14-1/2 Oz. can Low Sodium Chicken broth (apprx 2 cups)
12 oz. Tyson skinless Chicken Tenders, 1/2" cubed or "pulled"
2 TBL RealLime Juice
2 TBL Minced fresh Cilantro
Directions
Put chicken tenders in oven at 375 degrees for 25 minutes.
Meanwhile, In large pot, heat the olive oil over medium heat.
Add onion, garlic and red pepper. Saute about 5 minutes.
Stir in the beans, chiles, cumin, chili powder and broth.
Bring to a boil.
Reduce heat to simmer. Simmer for 15 minutes.
Cube or pull/shred cooked chicken.
Stir the chicken into the pot, and simmer 5 minutes.
Stir in lime juice and cilantro.
OPTION: Garnish with Salsa, NOT included in calculations.
