    2 boneless, skinless chicken breasts
    1 medium onion, diced
    2 heads endive, halved
    2 Tbs. Olive Oil
    1 head garlic or to taste
    2 tsp. smoked paprika
    2 tsp. thyme
    1 1/2 baking potato, diced


1. Preheat oven to 450 degrees F
2. While oven is heating, saute onions in half of the olive oil. Add chicken breasts when onions begin to soften.
3. Brown chicken on both sides, adding spices while browining.
4. When oven is heated, add endive, garlic cloves (peeled), the other half of the olive oil, and the potatoes.
5. Cook for approximately 35-40 minutes, or until potatoes begin to brown on the edges and the chicken is cooked through.

    I reduced the potatoes and added some carrots, also used no more than 1 Tbsp oil max. (2 tsp in the onions and chicken, 1 tsp to coat the potatoes so they could brown). Spiced w/ rosemary, thyme, black pepper and some smoked sea salt. Good flavor, but chicken was dry, and not best use of endive. - 2/4/10
