Introduction

Ingredients

1 pound of pinto or pink beans (nutrition info calculated with pinto)
Leftover ham (hamhock or bacon with also do) - calculated with a 14 oz ham steak that was cubed, but reduce for lower calories and fat
6 cups of water
2 tbsp of garlic
½ cup of chopped onion
1 6-oz. can of tomato paste
2 tsp chipotle chili powder (I use a very spice chili powder, so it makes this dish HOT!)
2½ tbsp brown sugar
½ tsp cumin
½ tsp cinnamon
Salt to taste
Directions
1. Soak cleaned & washed beans overnight in enough water to cover. Drain and rinse.
2. In a large pot, boil beans, meat, and water for ~1 hour until beans are almost tender.
3. Add remaining ingredients and stir well. Bring back to boil, then reduce heat and simmer for another 2 hours at least.
Alternatively, place into slowcooker on low for at least 10 hours or bake at 325°F for 1-2 hours (if beans are tender first).
Serving Size: Makes 14 1/2-cup servings
