Introduction

Here we go...summertime's a-comin', and there's nothing like a good brat, huh? Except for the fats, chemicals, additives...'bratwurst,' the German word for "down-payment on a coronary disease." These are ALL natural, non-chemically-enhanced, GREAT for those watching fat intake, SUPER for protein sourcing, and animal-friendly. Ingredients

    Vital wheat gluten, 16 oz
    Salt, 2 tsp
    Onions, dehydrated flakes, 2 tsp
    Pepper, black, 1 tsp
    Parsley, dried, 2 tsp
    Nutmeg, ground, 1/2 tsp
    Celery seed, 1/2 tsp
    Ginger, ground, 1/2 tsp
    Olive Oil, 1 tbsp
    Water, tap, 20 fl oz

Directions

Add all dry ingredients to a large food processor bowl. Process until well-mixed. Add in oil, while processing, and then water. When the mixture is well-mixed, but chunky looking, remove from food processor and divide into 12 3oz portions. Roll and stretch the portions into log shapes roughly five and a half to six inches long, and about 3/4 to 1 inch in diameter. Wrap in parchment paper, somewhat tightly, and tie the ends, JUST a little longer than the body of the dough. Place in a steamer and steam for 35 minutes. cut the ends of the wrapping, and unwrap. These are ready to eat, now, but they can be grilled, sauteed in a pan with a little cooking spray, or simmered in sauerkraut.

Serving Size: 3 ounces; makes 12 each.
