Introduction

Ingredients

    2.25 cups unbleached flour
    Cooking parchment paper
    .5 teaspoon baking soda
    1 teaspoon baking powder
    .5 teaspoon salt
    1.5 cups sugar
    1/3 cup sugar for rolling (reserved)
    2 OZ cream cheese cut into little pieces
    6 tablespoons (3/4 stick) light margarine
    1/4 cup Egg Beaters
    1/3 cup vegtable oil
    1 tablespoon milk
    2 teaspoons Vanilla Extract

Directions

Preheat oven to 350 degrees

mix flour, baking soda and baking powder together set aside

put cream cheese and sugar in same bowl. Melt margarine and pour over sugar and cream cheese. Whisk until almost fully mixed. Add Egg Beaters, vanilla, oil, and milk. Mix until smooth.

Add flour misture to sugar mixture. Sitr until nice cookie dough forms. Divide dough into 24 equal amounts. Roll into balls. Roll balls through reserved sugar until covered in sugar.

Place parchment paper on rimmed cookie sheets. Place 12 dough balls on each sheet, evenly spaced. Flatten each ball until it has a radius of 2 inches. Cover top of cookies with remaining reserved sugar.

Place 1 cookie sheet in oven for 11 -15 minutes. Let cookies rest on cookie sheet for 5 minutes then move to wire rack until cool. Repeat with other sheet.
