Introduction
No corn tortillas but all the creaminess of my favorite "go-to" dinner. No corn tortillas but all the creaminess of my favorite "go-to" dinner.Number of Servings: 3
Ingredients

1 Can of chunk chicken breast, 13 ounces, with juices
1 can of mushroom slices, drained
1 can of Old El Paso green enchilada sauce
1/3 chopped green onions
3 wedges of Laughing Cow Swiss cheese
6 cups spring mix
1/2 shredded cheddar jack cheese
salsa (optional)
Directions
Pour the first four ingredients into a sauce pan and simmer until bubbly. Turn heat down and add the 3 wedges of Laughing Cow cheese. Stir and press against the side of the pan until melted.
Pour 1 cup of the hot mixture over 2 cups of spring mix salad. Top with 1-2 Tbsp of shredded cheese and salsa if you wish.
Add ins- for much crunch and texture, add sliced cucumbers and diced tomatoes.
Serving Size: makes about 3 cups of creamy chicken enchilada sauce
