Ingredients

    one egg
    4 egg whites
    half cup fake crab meat
    one cup cooked escarole
    1/4 cup of cooked leeks
    1/2 cup of fake crab meat
    pepper to taste
    1/4 c of low fat cheddar cheese shredded
    2 TB of Parmesan cheese

Directions

mix egg and egg whites. Add all the rest of ingredients and bake at 350 for about 15-20 minutes.
