Introduction

Ingredients

4 large bell peppers
1 lb ground turkey (find lean if you can)
2 tbsp chopped onion
2 tbsp all of the spices mixed up
1 15-oz can dark red kidney beans, rinsed and drained
1 8-oz can no-salt-added tomato sauce
1 plum tomato, diced
1/3 cup reduced fat shredded fiesta blend cheese
Directions
In a large kettle, fill with water and bring to a boil. Place bell peppers in and cook for 3-5 minutes. Place in a bowl with cold ice water to stop the cooking. Drain and set aside.
Cook turkey meat and onion until meat is no longer pink. Drain the fat. Place meat and onion back into pan. Mix homemade taco seasoning,kidney beans, tomato sauce, and 1 can of water (from the tomato sauce) into the meat and stir well. Bring to a boil and reduce to simmer for 10 minutes or until thickened.
Cut bell peppers in half from top to bottom. Lay in their sides, and fill with taco meat mix. Top with shredded cheese. Then add diced tomatoes and a little reduced fat sour cream if you like.
Makes 8 halves.
