Ingredients

1-1/2 c. wheat flour
1/2 c. white flour
1/4 c. sugar (use more or less depending on how tart the cranberries are)
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1-1/2 c. chopped fresh cranberries
1 egg
1 orange, zested and juiced
1/2 c. orange juice (save any leftover juice for drinking)
1/4 c. canola oil
Directions
Combine dry ingredients. Stir in cranberries till well coated and evenly mixed.
Beat egg, orange juice, oil, and zest; add to dry ingredients all at once. Stir just to moisten--DO NOT OVERMIX!!!!
Spoon into greased muffin cups, filling about 3/4 full. Sprinkle tops lightly with additional sugar if desired. Bake at 400 degrees F. for 15-20 minutes, till lightly browned and springy to the touch.
Makes 12 regular sized muffins. They're small and dense and packed with flavor!
