A deep-fried FRITTER popular in India. The batter is generally based on BESAN flour (ground CHICKPEAS) and can contain most anything including vegetables, fruit, rice, fish or meat. Usually small, the crisply fried pakoras are most often served as appetizers or snacks.

Ingredients

BATTER
5 cup chick pea flour
10 tablespoons oil
2 Tablespoons ground cumin
2 tablespoons salt
2 1/2 cup water
VEGETABLES
5-10 green chilies, chopped
5 tablespoon cilantro, chopped
5 potato potato, sliced 1/4 thick
20 cups cauliflower very small florets
5 cups spinach leaves, torn
7 1/2 cups onions, halved and sliced
Directions
1. Boil the potato slices until *just* tender, being careful not to overcook.
2. Mix batter ingredients well. Beat in a blender for 4-5 minutes to incorporate air (this will make the batter fluffier). Let batter rest 1/2 hour in a warm place.
3. Add the vegetables and mix in evenly.
4. Deep fry in oil until golden brown.
Drain on paper towels and serve immediately.
5. Serve hot with our cilantro or mint chutney or cucumber raita.
