Ingredients

    400 gms skinles chicken breast
    1 can tomatoes
    1 cup fresh tomatoes
    2 Tbsp tomato paste
    1 Tbsp crushed or fresh red chilli
    1 onion diced
    1/2 C green pepper diced
    2 green or yellow courgettes diced
    1/2 C red pepper diced
    1 C mushrooms
    2-3 cloves garlic crushed
    1 C water
    1-2 Tbsp fresh or dried herbs (oregano, thyme etc)
    salt and pepper to taste

Directions

brown sliced chicken in frying pan
add with all other ingredients to slow cooker
cook on high for 30 min then low for 90 mins

eat over cous cous or rice!
