Korma is a rich, creamy, North Indian cooking sauce seasoned with garlic, ginger, coriander, and coconut. A popular sauce from the Andhra region, its flavor is mild, aromatic, and naturally sweet. Ingredients

    1/3 cup and 2 tablespoons vegetable oil
    1 bag Diced onion, diced (5#)
    3 tablespoons minced fresh ginger root
    20 cloves garlic, minced
    1 Bag Diced Potatoes (5#)
    1 Bag Diced Carrots (5#)
    1 can Green Chili
    2 cup ground unsalted cashews
    1 #10 can tomato sauce
    3 tablespoons and 1 teaspoon salt
    1 cup curry powder
    5 cups frozen green peas
    3 green bell peppers, chopped
    3 red bell peppers, chopped
    8 cups coconut milk
    5 bunches fresh cilantro for garnish

Directions

Heat the oil in a large pot over medium heat. Stir in the onion, and cook until tender. Mix in ginger and garlic, and continue cooking 1 minute. Mix potatoes, carrots, Chili, cashews, and tomato sauce. Season with salt and curry powder. Cook and stir 10 minutes, or until potatoes are tender.
Stir peas, green bell pepper, red bell pepper, and coconut milk into the pot. Reduce heat to low, cover, and simmer 10 minutes. Garnish with cilantro to serve.
