Introduction

These burgers don't shrink in the oven -- instead, they seem to inflate! They get very big and juicy, probably because of the egg whites being absorbed by the added grains. They are amazing. You could easily break the mix up into a larger number of servings (6-8) and feel very satisfied by just one burger. (The added grains and flax seed also make them very filling.) Ingredients

    1 20-oz package lean ground turkey
    1/4 cup breadcrumbs
    1/2 cup multi-grain hot cereal (uncooked)
    2 tbsp ground flax seed
    1/2 teaspoon cajun seasoning
    1/2 teaspoon pepper
    2 egg whites, beaten
    1 tbsp TJ's Island Soyaki

Directions

Preheat oven to 375 degrees.

Line a glass baking pan with aluminum foil and spray lightly with PAM or similar cooking spray.

Mix all ingredients well in a large mixing bowl. Shape into patties and place into lined pan. Bake on a high rack in oven at 375 for 25 minutes, then broil on high for the last 5 minutes if desired.

Serve on whole grain hamburger buns with light Jarlsberg Swiss cheese. (Bun and cheese not included in calories!)

Makes 4-8 servings (depending on the size of burger desired).
