Ingredients

    2cups black beans (canned or cooked & rinsed)
    4 egg whites, include one yolk
    2 tbsp coconut oil, butter OR NUT BUTTER (replace all or part with applesauce for lower fat)
    4 tbsp unsweetened cocoa powder
    1 tbsp vanilla
    1/2 cup agave OR natural honey
    1 tsp instant coffee (optional but really adds to flavour)
    1/4 cup choppd walnuts

Directions

Note: to reduce fat you can replace 1-3 tbsp oil and add applesauce. Nutritional info has been calculated using 1 tbsp peanut butter and 1 tbsp coconut oil.

In seperate bowl, blend rinsed and drained canned or cooked black beans using potato masher or hand blender - they should be well mashed into pasty consistancy - In seperate bowl beat oil into egg whites and add to beans. Add honey mixture. Mix in other ingredients one at a time...mix together well!

Bake at 350 for approx 40 minutes in sprayed 9 x 9 baking dish, glass better. Cut into 12 pieces. Store in Fridge.

    I love that this recipe contains no flour or refined sugar! I didn't have black beans on hand, so I substituted fava beans. I almost doubled the cocoa powder to give an antioxidant boost and add more choclatey flavour! - 2/15/10
