Ingredients

    Yellow Sweet Corn, Canned, 1 can (12 oz) yields
    Corn, sweet yellow, canned, cream style, 1.can
    Cheddar or Colby Cheese, Low Fat, 1.5 cup, shredded
    Egg substitute, liquid (Egg Beaters), .5 cup
    Milk, nonfat, .25 cup
    Pepper, black, .5 tbsp
    Garlic, 1 clove minced
    Saltine Crackers, fat free , 10 saltines

Directions

* sautee minced and crushed garlic in pam
* open cans of corn.. drain plain corn
*dump cans of corn and chredded cheese in 9x13 inch casserole dish, stir around to mix
* crush saltines and sprinkle over top
* mix egg, milk, pepper, and garlic together and pour over top
* bake for 20 minutes

    Wow! For high in protein, low in fat, this recipe will be a major staple in my house. I've already had one request to please make corn casserole again! Kind of messy so I would recommend a tad more cooking time to firm up. - 11/6/07

    I loved this, but the kids wouldn't touch it and hubby said it was only fair. Still, it was easy to make and I'd recommend it. Just not for the rest of my family. - 11/4/07
