Ingredients

    Kellogg's All-Bran Cereal, 1.5 cup
    Milk, 1%, 1.25 cup
    Salt, 0.5 tsp
    Baking Powder, 3.5 tsp
    Honey, 6 tbsp
    Canned Pumpkin, 1/3 cup
    Whole Wheat Pastry Flour, 0.75 cup
    Flour, white, all-purpose, 0.5 cup
    Egg, fresh, 1 large

Tips

Add some dried fruit for extra flavor. My favorite is dried blueberries.
Unsweetened coconut milk is a great substitute if you can't eat dairy.


Directions

Stir together flours, baking powder, and salt. Set aside.
Measure bran cereal and milk into mixing bowl. Stir to combine. Let stand 1 to 2 minutes, or until cereal is softened. Add egg, honey, and pumpkin. Beat well.
Add dry ingredients to cereal mixture, stirring only until combined. Portion batter evenly into 12 greased muffin=pan cups.
Bake in oven at 400 degrees F, about 15 minutes or until muffins are golden brown.
