Ingredients

    cooked beans (try pink, pinto, adzuki, or black)
    cooked Sticky Brown Rice (I used quinoa)
    chopped fresh arugula, Napa cabbage, or romaine lettuce
    chopped green onions

Directions

- Boil beans for 15 minutes and then soak for 1 hour before starting meal or soak beans over night
- rinse beans
- bring beans to a boil again
- simmer for 30-45 minutes

- If you are using rice, prep ahead of time as well. (30 minutes)

- Quinoa should be rinsed or soaked for five minutes
- boil quinoa with salt in 1 1/2 cup of water
- let quinoa simmer for 15 minutes
- let quinoa soak for 5 minutes

Add all ingredients to a bowl and top with the Avocado Sauce (another recipe).
