Ingredients

    1lb bag lentils (I used kroger brand)
    1 red onion
    2-3 redskin potatoes
    3-4 cloves garlic
    Leftover chorizo (optional, could be made vegetarian)
    1 bag frozen spinach
    2 tbsp olive oil
    Chicken (or veggie) broth
    1 can fire-roasted tomatoes
    1-2 Chipotle peppers in adobo sauce

Directions

Saute Onion & Garlic in Olive Oil
Slice chorizo, add in
Once sweated (about 5-10 minutes), add ni all other ingredients except spinach
At the last minute, add spinach
Enjoy!

Serving Size: makes 6 2-ladle bowls
