Ingredients

    4 Egg Whites
    85 g Cherry Tomatoes
    20 g Purple Onion
    10 g Jalapeno pepper
    2 Tbs Cilantro
    1 Tsp - Tbs Lime Juice (Taste)
    30 g Avocado
    1 Tbs Olive Oil
    Sea Salt to Taste
    Fresh Ground Pepper

Directions

Make salsa combining halved tomatoes, chopped purple onion, diced jalapeno, one Tbs cilantro and lime juice to taste.

Next, cook the egg whites in olive oil and season with salt and fresh pepper to taste. Top with the sliced avocado and remaining Tbs of cilantro.
