Introduction

Ingredients

    1 1/2 cups Pamela's Gluten Free pancake mix
    3 large eggs
    2 Tbsp oil (i used canola, but it doesn't specify what kind on the bag)
    1 tsp splenda/sugar baking blend
    1/2 tsp cinnamon, ground

Directions

preheat Belgium waffle iron.
separate egg whites and yolks, whip egg whites until stiff-set aside for now.
in other bowl, mix egg yolks, pancake mix, oil, splenda and cinnamon until all lumps are gone.
fold in stiff egg whites.
use a 1/2 cup measuring cup to scoop mix onto Belgium waffle iron.
follow directions for your iron to cook properly.

Serving Size: 1/2 waffle, makes 5 waffles

    The only liquid in this recipe is the oil and egg yolks, which was not enough to wet the dry ingredients. I probably added 1/2 - 1 cup of milk just to be able to get a batter consistency. The end result was great, but the recipe clearly needs some adjustment. - 1/15/12
