Introduction

This is a nice healthy pesto dish without all of the added oil. I only added 1 tsp of Olive Oil and used Greek yogurt to make the sauce. this is so simple and yet so tasty. Allot of flavor in this dish. You can have it warm or cold. Were having it as a cold pasta for tomorrow nights dinner. I thought all the flavors would really incorporate over the evening. Ingredients

    Pesto Ingredients
    1 cup of fresh spinach leaves
    13 Basil Leaves
    1 clove of garlic
    1 Tbsp of Parmesan Cheese
    1 tsp of Olive Oil
    .50 cup of Non-fat Plain Greek Yogurt

    2.25 cups of Whole Wheat Pasta ( I used pasta shaped like boobs lol)
    9 oz of cooked chicken diced or shredded (I used already cooked chicken from trader Joe's)
    1 cup of cherry tomatoes cut up

    Salt & Pepper to taste

Directions

Cook pasta according to directions. Once cooked, set aside in a bowl.

In a mini food processor add pesto ingredients (not yogurt):
Basil Leaves
Spinach Leaves
garlic
Olive Oil
Parmesan Cheese
Process until well combined. Place in a small bowl and add Greek Yogurt. Mix until combined and give a taste to see if you need any salt & Pepper.

In the Pasta bowl, add your pesto sauce mix well, then add chicken and cherry tomatoes.

Refrigerate until ready to use. Serve some Parmesan Cheese on the side for those people whole love cheese.

Optional ingredients:

Instead of cherry tomatoes, you could use sundried tomatoes.

Add other veggies such as zucchini, onions, bell peppers ect...
