Introduction

Ingredients

1 2/3 c Pure Vegetable Shortening
1 c Light Brown Sugar
1 can (15oz) Unsweetened Apple Sauce
1 can (9.3 oz) Sweet Potatoes (drained and mashed)
4 eggs
2 tsp Vanilla Extract
2 tbsp cinnamon
1 tsp nutmeg
1 tsp orange extract
1 tsp almond extract
1 tsp orange zest (from the peal of an orange)
3 c all purpose flour
2 tsp Baking Soda
2 tsp Salt
6 c quick oats
Directions
Preheat oven to 350 f. Line cookie sheet with parchment/ wax paper or grease lightly. Beat shortening, sugar, applesauce, and sweet potato's until creamy.
Add eggs two at a time, beating between each, Add vanilla, orange extract, almond extract, cinnamon, nutmeg, and orange zest. Mix well
Combine flour, baking soda and salt in a separate bowl. Add to shortening mixture. mix well. Stir in oats until combined. (you may also add nuts and or raisins at this step)
Using rounded tablespoons roll into balls and place 2 inches apart on prepared cookie sheet. Flatten with a fork. Bake 15-18 minutes or until lightly browned. let stand 1 minute before removing to racks to cool
Serving Size: makes 10 dozen 2" cookies
