Ingredients

    Ingredients:
    Carrots, raw, 2 cups, large dice
    Celery, raw, 2 cups, diced (I like the inner leaves too)
    Onions, raw, 1 cup, diced
    Olive Oil, Extra Virgin, 4 tbs
    Garlic, 3 cloves minced
    Crushed Tomatoes, 822 grams
    Zucchini, 1.5 cup, large dice
    Summer squash, 1 cup, large dice
    Calabasa Squash, 1 cup, cubes (or any winter squash)
    Parsnips, 1 cup diced
    Cabbage, fresh, .5 head, small (about 4-1/2" dia) chopped
    Broccoli, fresh, .75 cup, chopped
    Chicken Broth, 4 cups - (or vegetable broth to make it vegetarian)

Directions

Heat olive oil on medium high heat. Saute onions, celery, and carrots (5 min.). Add garlic, winter squash, parsnips and 1/2 cup of the broth. Saute another 5-7 min. Add all other ingredients and cook on medium-low heat for another 50-60 minutes.

Serving Size: Makes 8, 1-1/2 cup servings
