This is a very light and flavorful meatloaf. It makes two meatloafs so you can eat one and freeze one. Or if you are having a big dinner party it will feed them all. Ingredients

    1 lb Ground Pork
    1 lb Ground Beef
    1 c. Carrots Chopped
    1 C. Onion chopped
    1/2 C. Red Bell Pepper Chopped
    1/2 C. Green Bell Pepper Chopped
    2 Eggs
    10 Saltines Crumbled
    3/4 Can Of Soda (Diet)
    1 Packet of Lipton Soup Mix

Directions

Preheat the oven to 350 degrees
Combined all ingriedents into a bowl and mash with your hands. Use 2 9x13 baking dishes and create two loafs. One in each dish. Bake for 50-60 minutes.
