Ingredients

    4 T. olive oil
    2 T. butter
    2 medium onions, chopped
    6 cloves of garlic, pressed or minced
    1 lb. lean ground beef
    1 zucchini, shredded
    1 yellow squash, shredded
    1 C. chopped tomatoes
    3 T. lemon juice
    1.5 T dried parsley
    1.5 T dried mint
    20 large grape leaves

Directions

Heat butter and olive oil over medium heat in large skillet. When hot, add onions and garlic. Saute 5 minutes or until onion is clear. Remove from heat and cool. Combine remaining ingredients except for grape leaves. When cool, add onions and garlic to mixture and combine all well. (Mixing with hands is best.) Trim stems from grape leaves, if needed. Place one grape leaf, smooth side down, on a flat surface with the stem side toward you. Roll approximately 1 T. of mixture into the grape leaf (depending on size). Repeat until all mixture and leaves are used. Line a large pot with any unused leaves. Place stuffed grape leaves in pot and add water just to barely cover. Place a heavy plate or saucer on top to hold leaves down and keep them from unrolling. Cover pot. Bring to a boil, then reduce to simmer for one hour. Serves 4 as a main course or 10 as an appetizer.
