Introduction

Recipe from the "Best of Pillsbury" Cookbook. Basic recipe also calls for 1/2 tsp salt, which I left out to reduce sodium. I switched flour tortillas to wheat. Also good with beef or shrimp. Ingredients

    4 tsps chlli powder
    1 tsp ground cumin
    4 garlic cloves, minced
    1/4 cup lime juice
    4 boneless, skinless breasts
    2 red or yellow bell peppers, seeded, cut into rings
    2 small onions, thinly sliced, separated into rings
    8 (8-10") wheat tortillas

Directions

In large bowl combine first five ingredients. Mix well. Add chicken, bell pepper and onion. Stir to coat. Cover bowl; marinate for 2 hrs, turning once.

Heat grill. Cut four 18x12 pieces of heavy-duty aluminum foil. Remove chicken and veggies from marinade. Place 1/4 of chicken and veggies on each piece of foil. Wrap securely allowing room for expansion. Wrap tortillas in separate foil.

Place packets on gas grill over medium heat. Cook 10-15 minutes or until chicken is no longer pink. Cook tortillas 2-3 minutes until warm.

Serve one foil packet with two tortillas.

*Can also be baked in 425 degree oven fo 15-20 minutes.
