Introduction

Ingredients

    1 cup olive oil
    1 cup splenda
    1/3 cup skim milk
    2 tsp vanilla extract
    2 large eggs
    2 cups oats
    1 1/2 cup pancake mix
    1 cup slithered almonds (or crunched walnuts if you prefer the texture)
    1 1/2 cup cranraisins
    4 scoops protein powder

Directions

Set the oven to 350F.

Combine the olive oil & splenda and blend with an electric mixer (to achieve homogeneity).

Combine the milk, vanilla and eggs separately before adding to the oil/ splenda mixture. Stir everything together.

Add the remaining ingredients and blend until everything is moist and seems well blended - the mixture will be difficult to stir at this point. Then spoon onto parchment paper (I find a desert spoon works well).

Bake for 15 minutes, cool and serve.
