In our neck of the woods the basic recipe includes cilantro, onion, and steak meat, usually flank steak, wrapped in a warm corn tortilla. Or use chicken/fish/pork instead of steak. Purists stay true to the three main ingredients but we like to add a few additional toppings.

Ingredients

    Also known as sabrosos tacos, at their most simplest these tacos are just meat, cilantro and onion. You may add any number of toppings to the basic recipe. We like cheese, avocado, salsa and fresh lime juice. Add your favorite toppings, or enjoy just as they are. Makes any number of tacos depending on amounts of toppings you prepare.
    The ingredients list reflects amounts per taco. That way the calorie/fat/carbo/protien nutrition values will be easier to track by the number of tacos eaten.
    Basic -----
    2 oz flank steak
    1 Tbsp chopped onion
    1/2 Tbsp chopped cilantro
    1 corn tortilla (medium, approx 6 inches)
    Toppings -----
    1/5 cup shredded colby moneterey jack cheese
    1 tsp mashed avocado
    1/2 Tbsp salsa
    1/4 wedge fresh squeezed lime juice

Directions

chop: cilantro; onion
grate: cheese (colby/monterey jack)
quarter: a fresh lime
mash: avocado (adding ingredients to make guacamole will add to the nutrition fact sheet values)
Set all prepped ingredients aside.

chop: flank steak into 1/4 inch or smaller pieces
Quickly braise flank steak, chopped.

Microwave tortilla to soften - 15 seconds or so.
Add steak as first layer to tortilla.
Add onion and cilantro.

Toppings:
Drizzle with fresh squeezed lime juice.
Add shredded cheese, avocado, and salsa.
Fold tortilla in half and enjoy !
