Introduction

Very tasty and filling soup. Very tasty and filling soup.
Number of Servings: 8

Ingredients

    2 bunches or 1 pound fresh broccoli, chopped
    1 medium onion, chopped
    1/2 cup light margarine
    1/2 cup white flour
    1/4 cup non-fat dry milk
    4 cups water
    Mix dry milk and water together before using.
    1 cup fat free chicken broth
    1 1/2 tsp. salt
    2 cups shredded or grated mild cheddar cheese

Directions

Cook broccoli until tender. Do not overcook. Drain and set aside. Saute chopped onion in margarine in large soup pot and then add flour. Gradually stir in milk, chicken broth, and salt. Stir constantly until mixture reaches a boil.Cook 1 to 2 minutes, until thickened. Add broccoli and cook over medium heat briefly. Stir in cheese. Avoid bringing to a boil. Serve immedicately or keep on warm over low heat.
