Introduction
Grandpa learned this recipe from his mom. My Great Grandma was the daughter of a Rabbi who moved to CA, to marry my Great Grandpa who was an Irish Catholic. Her father embraced the marriage, while G.G.'s family disowned him.The recipe takes 2 days two make if you fix it in the evening. One day if you cook and chill the beets in the early morning.
This was always a lovely addition to evening meals in the summer. Grandpa always served his with a big dollop of sour cream to be stirred in as you ate it. (I did not include the sour cream in the nutrition info.) Grandpa learned this recipe from his mom. Ingredients

1 lb of fresh beets (about 8)
Juice of 1 large lemon
Pinch of salt (less than 1/4 tsp)
1/2 tsp sugar

Directions
Wash beets, if they have the tops on Leave Them.
Place washed beets in in a 2 quart or bigger pot. Cover with 2 inches of cold water.
Bring to boil, reduce heat, cover and simmer until beets are fork tender.
Remove from heat. Allow to chill, place cool pot in fridge to chill further. Once the beets are chilled place them with small amounts of the cooking liquid into the blender and puree. Alternating beets and liquid until all of the liquid and the beets have been pureed. (If you have a food processor use that instead. If neither mash by hand.)
***Caution*** make sure the lid on you tool of choice stays on firmly. Trust me you don't want borscht exploded across your kitchen.
Serve chilled.
