4 large (8 oz. x 4 ea. = 32 oz) cooked sweet potatoes
6 cloves garlic
1 tbsp butter
cooled broth from boiling sweet potatoes
Directions
Serving Size: 10 each 1/2 cup
While sweet potatoes are boiling; Peel garlic. Place peeled cooked sweet potatoes in food processor, add peeled garlic cloves and butter; mix while adding sweet potato broth, enough to make desired consistency of mashed potatoes. Season at the table to individual taste. Makes 8 servings of 1/2 cup each.
