Number of Servings: 2

Ingredients

    85g fresh breadcrumbs (2 thick slices of bread)
    2 tablespoons olive oil
    1 courgette finely grated
    2 tablespoons fresh parsley chopped
    50g freshly grated parmesan cheese
    zest of one lemon
    salt and ground black pepper
    2 boneless white fish fillets eg. tarakihi or snapper.

Directions

Mix together breadcrumbs, olive oil, courgette, parsley, parmesan, lemon zest and seasoning.

Put the fish fillets on a lined baking tray. Press the crumbs in firmly to the top of each fillet, so they stick. Bake at 180 degrees celcius for 15-20 minutes until fish is just cooked and topping golden. (Can serve this with asparagus and new potatoes)
