Introduction

Ingredients

    Ingredients:
    Basmati Rice, 3 cup
    6 cups of water
    Salt, 1 tbsp
    Onions, raw, 1 medium (2-1/2" dia) Sliced not chopped
    *Cloves, whole, 8
    *Cinnimon, whole stick 1 broken in 2
    Peas, frozen, 0.5 cup

Directions

Place rice in a bowl and put in warm water. Repeatedly rinse the rice until the water appears clear instead of milky.

In a pan heat olive oil (light) (1 tsp) with sliced onions, cloves and cinnimon and stir until the onions are dark brown. They almost look like they are burned. Take a lid and about 1/2 cup of hot water and place in the pan of onions and immediately cover so that it doesn't spatter. Remove the onions, cinimmon sticks and cloves and throw away. Take the left behind "water" and place in pot for rice. This gives it a nice flavor and colors it slightly. Place the 3 cups of cleaned rice and 6 cups of water into the pot with the onion water along with salt and bring to a boil. Reduce to simmer and keep covered for about 20 minutes. Take frozen peas and add them in at the last 2 minutes before serving the rice with JD's chicken curry. They will cook just enough but still be bright green and not overcooked.
