Ingredients

1 onion, chopped
1 stalk celery, chopped
1 cup chopped carrots
1 jalapeno, chopped
1 1/2 cups frozen corn
1 tsp garlic
1 tsp cumin
2 cans Swanson chicken broth, 99% fat free, 2 serving size
1 can Rotel diced tomatoes and chilies, 2.5 serving size
4 corn tortillas, cut in 1/8ths
1 cup of cooked red beans (not canned if avoiding sodium)
Directions
Serving Size: makes approximately 5 one-cup servings
Add onions, celery, carrots, jalapeno, garlic, cumin, and Rotel tomatoes to dry pan and soften them over medium high heat. Approximately 5 minutes, stirring frequently.
Add tortillas and allow to absorb heat, about 3 minutes.
Add broth, corn, and beans. Stir. Bring to low boil, then simmer for 10 minutes.
Can be served with additional baked tortillas and cheese.
