This casserole is a high fat recipe. It would be healthier using low fat soups, more veggies, and brown rice. I wouldn't advise making it often, but perhaps as a treat. Others in my family do not like veggies all that much, so I decided to enter the information just to see the outcome of the calculation. This casserole is a high fat recipe. Ingredients

    1 pound pork breakfast sausage
    1 cup raw white long grain rice
    1 cup chopped green pepper
    1 cup chopped celery
    1 cup chopped onion
    1 can cream of chicken soup
    2 cans cream of mushroom soup

Directions

Brown sausage as if you were cooking ground beef. Drain off grease. Wash rice until water runs clear. Mix rice, soups, and sausage. Saute vegetables until tender. Stir into rice, sausage, and soup mixture. Pour into a 9x13 baking pan. Bake covered at 350 degrees for 1 hour.
