Ingredients

1 cup whole wheat flour
1/4 cup each: cornmeal, oats and wheat bran
(You can substitute 1/4 cup ww flour for any of these you don't have on hand.)
1/4 cup wheat germ OR ground flax seed
1 T. baking powder
1 t. salt
1 cup (about 1 1/2 medium) bananas, mashed
1/2 cup milk
1 egg
1/4 cup brown sugar, packed
1/4 cup vegetable oil
1/2 cup chopped walnuts or pecans
1/2 cup mini semi-sweet chocolate morsels
Directions
Grease muffin tins or use foil muffin cup liners. Preheat oven to 375 degrees. Combine dry ingredients and set aside. Mash banana and add milk, egg, brown sugar and oil, mixing well. Stir in dry ingredients, then nuts and semi-sweet chips. Fill muffin cups 2/3 full and bake for 20 minutes.
