Ingredients

1 c cooked Chickpeas
2 TB Olive Oil
1/2 c Vital Wheat Gluten
1/2 c Plain Bread Crumbs
1TB Braggs Liquid Aminos (or soy sauce)
2 cloves Garlic, pressed or grated
1/2 tsp Lemon Zest
1/2 tsp Thyme
1/2 tsp Paprika
1/2 tsp dried rubbed sage
Extra Olive Oil for pan frying
Directions
Mash chickpeas and (first) olive oil together until no whole peas remain. Add remaining ingredients and knead until strings of gluten have formed. Preheat skillet over medium hit. Divide dough into four equal pieces. Knead each piece into roughly 6x4 rectangular cutlet shape. Pour extra oil in skillet. Place cutlets in skillet and cook for 6-7 minutes each side. They're ready when lightly browned and firm to touch.
