Ingredients

    •1/2 cup diced onions
    •2 cloves garlic, minced
    •3/4 cup vegetable broth
    •1 can chickpeas, rinsed and drained
    •1 can diced tomatoes
    •1 tbsp extra virgin olive oil
    •1 tbsp ground cumin
    •1/2 tbsp ground ginger
    •1 tbsp ground coriander

Directions

1.Saute the onion and garlic in olive oil over medium heat for a few minutes.

2.Stir in the cumin, ginger and coriander, and cook until the onion is tender and translucent.

3.Mix in the chickpeas, vegetable broth and tomatoes. Bring to a boil, then cover and simmer for about ten minutes.

4.Serve and enjoy!

    This sounds delicious. And I have all of the ingredients. (because I love hummus, I always have chickpeas on hand.) I will use low sodium tomatoes and low fat and sodium chicken broth. Reading labels I found more sodium and fat in vegetable broth. - 5/14/17
