Ingredients

    2 (about 16 ounce) jars of marinara approx 50 cal per serving
    1 box oven ready lasagna noodles
    4 cups part skim ricotta (approx)
    2 cups part skim mozzarella
    2 boxes frozen spinach (10 oz)
    2 cups mushrooms, frozen or canned, (approx)
    salt & pepper to taste

Directions

Pour enough marinara into your dishes to cover the bottom. Lay down a layer of lasagna noodles. Cover with approximately 1/4 of the ricotta. Sprinkle on approximately 1/4 of the spinach and mushrooms (and salt and pepper if using). Repeat layers approximately 3 more times. Top with the last of the sauce, sprinkle with mozzarella. Cover with foil and bake at 350 for about 45 minutes, uncover and bake about 15 more. For easier removal of foil, spray it lightly with cooking spray in case it sticks to the cheese, since at least with my pans, this fills them right to the top. I also recommend a tray under the pan to catch any overflow (though I haven't had it happen, just a precaution).

Serving Size: makes two 8x8 lasagnas or one 13x9; servings are 1/6th of square pan or 1/12 of the big pan.
