using a protein-laden pasta helps bump up the nutritional content of this dish. I use rotini pasta as it easily slides onto a spoon for someone with a disability. Ingredients

    2 oz dry vermouth
    Spinach, fresh, 1 bunch chopped
    Garlic, 3 cloves minced
    Walnuts, .5 cup, chopped
    Pasta, Barilla Cellentani, 4 oz
    Raisins, .25 cup, packed
    2T red pepper flakes, or to taste

Directions

heat skillet and add vermouth.
add garlic and spinach, cook several min until wilted.
decrease heat to low and add walnuts,raisins, pepper flakes and salt to taste
meanwhile cook pasta al dente and stir into spinach mixture.
