Ingredients

    3 oz Chicken
    1 cup Lettuce, mixed greens, packaged
    1 cup Spinach, fresh
    1 cup tomatoes
    1/4 cup blueberries, fresh or defrosted frozen
    1/2 oz fat free feta cheese crumbled
    1 tbsp walnuts chopped
    1/4 cup cannellini beans, no salt, rinsed and drained
    2 tbsp red onion sliced
    1 tbsp light raspberry walnut vinaigrette

Directions

Heat pan over medium heat. Add chicken. Cook approximately 5-7 minutes until chicken is cooked.

Add chicken to salad green combined with tomatoes, blueberries, feta cheese, walnuts, cannellini beans, and onions. Drizzle 1tbsp vinaigrette on top. Eat immediately.

Serving Size: Makes one salad
