Ingredients

4oz tomato paste
20 oz extra lean ground turkey
1/2 cup shredded cheddar (1/2 oz per serv)
1 bell pepper chopped
3 garlic cloves
1.5 tbsp
red pepper flakes
chili powder
salt pepper to taste
8oz lettuce (2oz per serv)
Directions
1. Sautee 3 garlic cloves in about 1 tbsp of olive oil. Add1 medium chopped green bell pepper. Mix
2. Add 20oz extra lean (99%) ground turkey (I buy this when it's on sale and stick in the freezer till I want to use it---thaw overnight before cooking).
3. Add red pepper flakes (if you like it caliente) and chili powder. salt and pepper to taste
4. Mix it all up!
5. Add a little bit of water once the meat is mostly cooked through. add about 4 oz or so of tomato paste (or more or less depending on how much you love tomatoes)
Serve over a bed of lettuce. Add 1/2 oz shredded cheddar cheese. HOLY MOLEY this was awesome!! seems sort of like a mock- Sloppy Joe meets Mexico.
